Here's another inspiring egg preparation for you this morning – eggs baked in potato skins! That sounds like the perfect thing right about now, and it definitely falls into the category of "why didn't we think of that?"
Over at the blog Kate in the Kitchen, Kate says this is her new favorite breakfast, and it's easy to see why. These baked eggs would be great with any number of toppings or all on their own with a little salt and pepper. And how perfect would they be for a brunch party?
Kate offers some detailed instructions on how to get the potato skins and eggs just right. You could also bake the potatoes and prep the skins the night before so all that's left to do for breakfast is fill them with eggs and pop them in the oven.
We can't wait to try this!

We had nests of mashed potatoes with eggs baked in the middle for after-Thanksgiving breakfast! The eggs got pretty rubbery on top, but overall it was delicious.

Yum. When I lived in the UK way back in the early 80s we ate our big meal at lunch--people I was living with worked at home--and we had a small supper around 8. We would usually eat soup and some bread & pate/cheese, but occasionally we had baked potatoes with lambs' kidneys in them. This is a similar idea and looks equally delicious.

I just finished trying them. Verdict: Amazing! I think this is my new favorite way to eat eggs. I did cheat a little, though. I sliced the potatoes in half, raw, and scooped them out before baking them. They baked faster and I'll use the scoopings to thicken my next batch of stew.
