Here's another inspiring egg preparation
for you this morning – eggs baked in potato skins! That sounds like the perfect thing right about now, and it definitely falls into the category of "why didn't we think of that?" Over at the blog Kate in the Kitchen, Kate says this is her new favorite breakfast, and it's easy to see why. These baked eggs would be great with any number of toppings or all on their own with a little salt and pepper. And how perfect would they be for a brunch party?
Kate offers some detailed instructions on how to get the potato skins and eggs just right. You could also bake the potatoes and prep the skins the night before so all that's left to do for breakfast is fill them with eggs and pop them in the oven.
