What are you cooking for dinner tonight? If you stop at the store on your way home from work and pick up a half pound of shrimp, or some inexpensive chicken thighs — or, better yet, a couple of juicy pork chops — one of these recipes will get your dinner on the table in less than half an hour. No meat? No problem. There's a wonderful grilled salad recipe too!
Pick one of these recipes, add a side of grilled zucchini or a simple salad, and an ice-cold drink (lemonade? Or maybe a more adult version?) and you have yourself a great meal for staying well-fed yet cool this evening.
- Simple Rosemary-Rubbed Pork Chops
- Spicy Grilled Shrimp
- Tangy, Spicy Boneless Skinless Chicken Thighs
- Korean Barbecued Short-Ribs
- Grilled Cactus and Corn Salad
What are you cooking for dinner? Does it involve the grill?

But the Korean short ribs recipe calls for a minimum 3 hrs marinading in the refrigerator. Does that mean the wait time is optional, or are you only considering foods that COOK in under an hour?
Whoops! Forgot about that marinade. But yes, I often don't let ribs marinate that long; they're still great if you just toss them in the marinade and slap them on the grill.
My husband has already made the pizza dough I'll try one of these tomorrow.
