This is a phrase I often find myself saying when I'm in the kitchen, and I say it in reference to a great many ingredients! An extra teaspoon of chili powder in the soup, one more glug of cream in a sauce, and a bit more cinnamon in that pastry.
The winner, though, is definitely cheese. I have a lot of trouble thinking of any savory dish that couldn't be improved with at least a dusting of shredded cheese...and many could use a little more.

I second the cheese. Maybe wine, if you have time to cook the additional moisture out.
In our house I add way too much garlic powder and cumin to just about everything (oh and adobo sauce).
Kosher salt is a new addition to things too - a chef friend said his secret ingredient is finishing things with salt and it makes SUCH a big difference. Sprinkling kosher salt on pizza, broccoli, or really anything brings out the magic flavors. Maybe this is seriously obvious, but I was brought up to think that salt was evil.

mine are garlic and red pepper flake year round. pumpkin pie spice in the fall through the winter! i add it to everything, including a big pot of chili

Hmm... I have to agree somewhat with the cheese, but generally it's just a purveyor of the true star - SALT! A little extra salt at the end goes a long way.
I have to second garlic, cream, and although I don't like a ton of it, sometimes a sprinkling of black pepper at the end is so good, especially on blander dishes like eggs, pasta, and potatoes.
Butter. When in doubt, a smidge more butter never hurt anyone, and can fix a myriad of cooking sins.
I'm with vintagejenta- SALT. I wish I didn't have such a love of salt, but I've never met a dish I couldn't enjoy just a hint more with a good dousing of salt and fresh black pepper.
In baking, I tend to be this way with almond or vanilla extract. You really can't have too much, it tastes so good!
Cheese - yes.
Butter - yes.
Black pepper - oh yes please.
But GARLIC. Oh, garlic is my weakness. I can never get enough.

Garlic, cheese, and smoked paprika. I have yet to find the upper limit for those three.

Truffle-based garnishes. Actual truffle, truffle salt, or truffle oil.
For sweet dishes, freshly whipped cream. Never enough.
Cheese. And chiles of some sort--there's always room for more chiles!

Garlic, big time. I always use more garlic than is called for in a recipe, and I'm truly baffled when a recipe calls for only a couple of cloves of garlic. It's just nonsensical to me.

Amen to "more cheese." Television chefs tell me to use "1/2 cup cheese" and I don't even know what that means. The only amount of cheese that I'm familiar with is "much," followed by a healthy sprinkling of "more" with "some on the side." Cheese...
I'm going to go with paprika.
If it were about making a little more of a whole dish than expected, I would do with mashed potatoes. While making them the other night I defended myself saying "If I'm boiling the water for it, and I've got the potatoes, I might as well do it... I'll eat them..."

Cheese! Parmasean to be exact, I love it. Once I breakout my microplane, all bets are off.
