These are just one example of how easy a little appetizer can be. Just make sure you have a packet of crackers or mini toasts and a log of goat cheese or a block of cream cheese, then improvise a topping. It's also an easily delegated task; ask an early-arriving friend to spread cheese and top with fruit (or chopped almonds, or herbs, or a sprinkle of smoked salt).
And yes, while this sort of appetizer does involve cheese (many of you expressed your weariness with the preponderance of cheese in easy appetizer ideas) similar snacks could also be whipped up with a smear of hummus or baba ghanoush.
