Q: This weekend I am attending a holiday brunch and I am stumped for what to make. There will be both vegan and celiac people present and I would like to make something everyone can eat. Potatoes, pancakes, frittata, and fruit salad are already being made by others. I have done some gluten-free baking before but am pretty amateur in that realm.
Any ideas of a festive, fresh, and hopefully fairly simple, dish?

Baked gluten-free oatmeal made with coconut milk?

Festive salad with cranberries nuts and pears (maybe some cheese on the side); hummus and other bean dips with crudites and corn chips; slow roasted tomatoes and other roasted vegetables; quinoa salad with grapefruit avocados and arugula; coconut macaroons; roasted spicy sweet potatoes.
I have no ideas for vegan baking but I know Whole Foods always has festive recipes and you can search by dietary restriction so maybe that is a good place to look. Have fun!

You could adapt it to make it more festive and brunch appropriate by using cranberries. Hash browns! For vegetarians, I like to sautee potato chunks in some good olive oil with onions, garlic, oregano, chili powder, salt, and thinly sliced red/green peppers, and that would also be vegan and gluten free. I don't have a specific recipe, but it's pretty hard to screw up as long as you keep tasting it.
I made these apple cinnamon gluten-free and vegan muffins for a brunch a while back, they were a huge hit, and super simple. Especially if you bring some jams or preserves to spread on them (maybe even lemon curd?) I love sweet breakfast/brunch foods.

Homemade granola or granola bars?
I second the quinoa recipe from 101cookbooks! That was my first thought when I read this post! Also, if you look for Bob's Red Mill oatmeal, it usually sells some that is specifically gluten free. In which case you can make the 101 cookbooks baked oatmeal recipe from Heidi Swanson's book! (http://www.lottieanddoof.com/2011/04/baked-oatmeal/). Just sub butter for a dairy-free spread and rice or soy milk for the milk.
pretty sure "mardi gras milk punch" made with milk and cream isn't vegan.

fruit salad!
I make a sweet potato casserole with crumb topping that is very well loved. Google Paula Deen sweet potato bake. Use coconut oil in the casserole instead of butter and leave out the milk completely (the texture is better this way.) Use Bob's Red Mill All Purpose GF flour for the topping and use veggie oil instead of butter in the topping. It tastes as good as the regular version and is always eaten to the point where the pan has been scraped out.

I love a good bloody mary but if you're serving vegans be careful with the ingredients. I'm a carnivorous fiend but have to be careful with vegan/veggie friends to avoid ingredients like Worcestershire sauce, clamato juice and obviously my fav bacon strip garnish.
