How do you add carrots to your raw salads? Typically you might see carrots shredded, or thinly sliced like radishes in a lunch salad. This easy recipe (four ingredients, plus dressing!), however, shows you a whole new way to incorporate this sweet root vegetable with the help of a spiralizer.

This salad is a great excuse to pick up the purple and white carrots you've been eyeing at the farmers market or grocery store. They add such a beautiful color to what would otherwise be a rather orange meal. Throw in some nuts, scallions, and raisins for a dish filled out with delicious textures.
