Our first Hollywood Farmers' Market visit of the new year was filled with the scent of oranges, mandarins, and lemons, and colorful piles of red, gold, and striped Chioggia beets. We came home with several varieties of each and intend to make some beautiful citrus and beet salads this week. We love this combination and rounded up some recipes featuring our farmers' market finds…
Roasted or raw, the earthy sweet flavor of beets is fantastic with tangy oranges or other citrus fruits. The combination brings bright flavor and color to winter salads. Peppery greens, fresh cheeses, and spices like coriander and chile are also good additions.

Absolutely love both beets and citrus. Here are a few of my own recipes using both ingredients: 1) beets with endives, blue cheese and grapefruit and 2) beets with oranges, blue cheese and pecans

I make beets all the time. I roast them, pull the skins off and keep them in the fridge. Then I use one or two many different ways.
I love them with thinly sliced red cabbage, add scallions, cilantro, shaved carrots, orange zest and sesame seeds, mix olive oil, hint of sesame seed olive, braggs and fresh lemon or lime juice, and sometimes add tofu, make a great crunchy satisfying salad.
