Ready for fall? Fall to us means deliciously creamy, nutty butternut squash (and other winter squash varieties too, of course). Here are eight of our favorite ways to enjoy a butternut squash — from soup to nuts, with recipes too!

Eight Things To Do With a Butternut Squash
1. Sauté with pasta - This Pasta with Butternut Squash, Sage, and Pine Nuts is an all-time favorite. (My husband and I served it at our wedding.) We also love this pasta with squash and bitter greens and fresh mozzarella, as well as this version with sage and brown butter.
2. Bake it into a pie - We love these Butternut Squash, Sage, and Parmesan Pasties. They are handheld pies that are just perfect for the lunchbox.
3. Puree it with cheese - Creamier than mashed potatoes, and just as good: Butternut Squash Puree with Goat Cheese.
4. Make soup - A step up from a basic puree, and so rich and comforting (and no need for too much fat — the squash itself is so rich): Cream of Winter Squash and Tomato Soup.
5. Toss it in a salad - Warm, just-tender chunks of sweet squash make a wonderful add-in for a spicy arugula salad (and fall is the perfect time for cold weather-loving greens like arugula): Warm Butternut Squash and Arugula Salad.
6. Make a dip - Squash makes a great appetizer! Butternut Squash and Parmesan Dip.
7. Cook it into sweet jam - Unusual, yes, but totally worth a try. This sweet squash compote has Brazilian and Portuguese roots, and it's amazingly good: Sweet Butternut Squash and Coconut Jam.

I was just wondering what to do with all the butternut squash I brought home from my mom's garden this weekend. Lo and behold, you gave me eight great ideas. Now if I could only choose....
Also, a friend of mine just did an awesome recipe - butternut squash pizza. Pizza crust, topped with sliced (roasted) squash, onions, EVOO, and fresh rosemary. Awesome.
Those pasties! They were so good last Fall. I will definitely be making them again now that the squash is back in season.

Here's a recipe for Butternut Squash Pasta Casserole. It was originally called Butternut Squash Macaroni, but I didn't use macaroni noodles. It's vegetarian & vegan, and delicious!
How timely, I was just working on what to do with the rest of mine from the CSA pick up. The first one went into a Lasagna with a little ground turkey for extra protein.
I want to share one of my favorite recipes with butternut squash: Roasted butternut squash soup with ginger, coconut milk and curry. It is incredibly easy to make, looks pretty and is topped with pistachios.
Make ice cream! This recipe pairs butternut squash with maple and Chinese 5 spice powder <\a> for a rich and complex dessert treat. It works with pumpkin or butternut equally well.
I also like butternut squash paired with chili and lime, as in this hearty stew. With chard and pinto beans, topped with steamed cornmeal dumplings, it's a complete 1-pot meal.
Mmmmm, made the pasties tonight. Those were delicious!
Risotto!! Caramelised butternut pumpkin (its called butternut pumpkin in Australia) risotto with some sage and parmesan, or feta and sundried tomatoes. You use butternut pureed with water as the stock, so the end result is a gorgeous orange colour.
Otherwise I like in pasta with a burnt butter sauce, or in a salad with bacon, baby spinach, pinenuts, cherry tomatoes, baby beetroot and parmesan cheese. Delicious.
My current favorite butternut squash recipe is a pasta tossed with roasted cubes of it, as well as spinach, parmesan, and bacon! Yummy. The squash gets wonderful texture from roasting that really goes well in the pasta.

Bechamel, lasagna, carmelized onions, butternut squash puree, lasagna, sliced beets, spinach and bechamel, lasagna, white cheddar, feta, and walnuts!!!
Roasted with chilli oil....mmmm. Also, I found a great recipe for chicken and butternut squash rogan josh which was extremely good too.
I made butternut squash and farro last night, that came out creamy and rich like risotto, topped with some walnuts and sage. Everyone loved it.
I make butternut squash raviloi, then cover them in a cheese sauce. It's good in vegetarian lasagne

This recipe from epicurious has been good to me.. and flexible too.. i can throw in different beans or meats depending on what i have on hand.
2nding the risotto. I don't use stock, I just boil a parmesan rind in water for this one. Also, half butter/half olive oil to saute the onions and coat the rice. Mm. I will definitely be making it this weekend!
Easy butternut squash soup: Roast squash, an onion, and 2 cloves of garlic on the same tray. Take the onions out after 20 min or so, roast squash until soft. Blend squash, onions, garlic, beef broth, and a little fat free sour cream in a blender til smooth. Yum!

3rd-ing the risotto. It's my favorite thing to add to risotto. So creamy and delicious, and not too bad for you!
I also like to roast butternut or acorn squash and then toss it with a balsamic glaze or the chile-lime vinaigrette from smittenkitchen.
Ugh. Wish I'd seen this a few days ago. I made squash soup over the weekend and I think I tried one too many fancy recipe tweaks (carmelized onions, roasted garlic...I tripped when adding turmeric...etc) because it was NASTY.
Ha I just bought a giant 2.5 butternut squash at the farmer's market.
I made a simple butternut squash soup (carrot, onion celery sauteed in EVOO, 1lb squash, .5lb potato, simmer and puree)
and am currently making a butternut squash curry that smells so good.
I will be using the rest to make squash-ricotta tartlets.
I love squash.
Third the risotto, and thank you for this -- my farm share just included 8 butternut squashes. Lord.
To ease the whole thing -- I find the peeling and chopping of these hard squashes tedious -- I roasted the squash in the oven till it was soft, then scopped out the flesh -- already pureed. Threw it in the fridge till I made risotto (2 days later). I made the risotto as I normally wood, and then in the last couple additions of broth I added the squash puree. It was a little on the sweet side so next time I might add a bit less. I just dumped the whole mess in. I topped with sliced wild boar and fennel sausage -- spicy and delicious and helped offset the sweetness -- and I fried sage leaves in olive oil and lightly salted them -- perfect. Parmesan cheese finished it all... pretty great.
I also like roasted butternut squash cubes on homemade pizza, with fresh mozzarella and sausage and arugula.
