We adore breakfast sandwiches with eggs. But up until last weekend, that invariably meant a fried egg. We hadn't ever even considered scrambled eggs on a sandwich. But then we ordered this scrumptious bacon, arugula, and egg sandwich for brunch, and when it came we were momentarily taken aback. Where was the drippy egg yolk?
But scrambled eggs on a sandwich have benefits: When you give up the one-shot sublime moment of a runny egg yolk, you do get more even coverage (more eggy goodness in each bite) and an easier and neater eating experience, too. Which do you prefer?
That delicious sandwich, by the way, was had at Seattle's Table 219. Everything we had there was delicious, especially the house raspberry jam.

I like both -- it depends on the sandwich. But lately I've been digging scrambled. I cook it like an omlette, then fold it so that there are lots and lots of thin layers of tender egg on the sandwich. Mmmm.
A fried egg sandwich, to me, is just this: an egg scrambled hard and put in between two pieces of buttered bread.
I use a fork to drag the yolk through the white two or three times, then pour the egg into a well-oiled skillet over low heat. I place a single slice of excellent quality AMERICAN :) cheese in the center. When the egg white is firm, I fold it around the cheese, and carefully place it on buttered bread. Salt and pepper. Say um um um. You still get a little bit of very soft yolk, but it doesn't drip out of the sandwich. And it's not really scrambled either.
I'm all for the fried egg, but I do wish there was a way to get it to cover the entire sandwich. I inevitably end up eating around and saving it for that last bite.
Mmmmmm I really want an egg sandwich...RIGHT NOW!!! I chose scrambled but what I really prefer is fried...but with the yolk cooked through...yummm
Definitely fried egg. Plain. Runny. Buttered toast and that's it. So delicious.

I can't choose. While I usually make fried (we called them Drippy Egg Sandwiches when I was a kid), I do love scrambled as well... When I lived in Brooklyn I used to get the Monster Egg Sandwich from Boerum Hill Food Company on Smith St.: Scrambled eggs with great cheddar cheese and applewood bacon on a ciabatta roll and it is TO DIE FOR. That turned me on the the scrambled-possibilities.
I never thought of a fried egg in a sandwich. Summer must contain at least one bacon, scrambled egg, tomato, mayo, preferably at the beach
I prefer a soft boiled egg, homemade jam sandwich. I love the way yolk melts into the bread and the jam tantilizes the tastebuds. The messier the sandwich, the better. yum....
Runny yolks are GROSS! I like over hard fried eggs on my sandwiches.
I love the yolksplosion...but sometimes it gets a bit messy. So I alternate depending on the situation.
At diners, I'll often get over easy eggs...eat almost all the white first. This leaves a little envelope of egg white holding the yolk. Then chomp that in one bite. Delicious.
I have a friend that can't stand to watch that or have eggs or meat be any bit raw. (She's ruined a fair amount of steaks.) Anyway, she'd definitely vote for scrambled in a sandwich.

Mark introduced me to Back (British) Bacon and runny yolk, while I was more used to the scrambled eggs and American bacon.... both are good though :)

Honestly, I like my eggs fried over hard. No runny yolks for me, please. Scrambled would be good on a sandwich, I think, though I usually go open-faced in which case it doesn't matter.

I grew up in the deep South where insert-ingredient-plus-mayonnaise sandwiches were king (banana and mayo, or canned-pineapple-and-mayo anyone?) so egg sandwiches at my house were always very simple-- scrambled eggs, mayonnaise, salt and lots of pepper.
I've always loved over-easy fried eggs, but never thought to put them in a sandwich until my boyfriend introduced me to the glorious goodness that is gooey egg cheese turkey slices and/or bacon in bread. Messy and delicious!
Runny eggs for the weekends, scrambled for the week. Can't eat a runny egg sandwich on the train, plus scrambled allows for better stacking...
While I am a fan of both, I would say if FORCED to pick one, I am going w/the fried (in bacon fat) goodness that will marry with a piece of cheese (cheddar works fine) and a nice whole wheat/grainy bread (sliced or English muffin)....wow, this is actually echoing what I ate for breakfast this morning and typing this makes me want one again!!
Fried egg with a broken yolk. Or if I'm worried about the sandwich being too unhealthy I'll sacrifice the yolk in order to keep the bacon/sausage

It's not about neatness for me, egg yolks just freak me out. I'll only eat them if they're scrambled or in omelet form so I don't notice, otherwise I'll have friend egg whites.
And of course I have to agree with everyone that mentioned bacon... that's what makes a breakfast sandwich for me.
Oh yes, ooozy fried yolk for me. Nice and drippy too so I can dip the sandwich into it like a sauce. After all, egg yolk is a perfect natural sauce, rich and runny. Over easy is nice and so is sunny side up. English muffin or some nice toasty grain bread - mayo yes, bacon oh yes.
I love this combo though: runny egg fried in olive oil, a slice of pancetta (fried alongside the egg), a few grates of lovely sharp Parmigiano-Reggiano, and a few sprigs of flat leaf parsley on toasted bread or English muffin. Salt and pepper too. Gorgeous!

I guess it depends for what I'm in the mood for at that exact moment. i love making scrambled eggs on super low heat with some butter -mmm its so creamy.
Fried eggs are harder to make for me because I always break it when I flip it.

I dislike egg yolks, so the only way I'll eat them is if it's all scrambled together.

Though someitmes if I'm not wanting the mess, I'll fry the egg over medium so that the yolk is still soft and gooey but I won't necessarily have that "yolksplosion" (love that term wunami!) :)

For me a breakfast sandwich has scrambled eggs and a lunch or snack sandwich has fried eggs (my favorite is just egg and ketchup on sour dough bread). I never considered a fried egg sandwich for breakfast, it was a Lenten Friday last minute dinner when I was growing up.
I have issues with egg yolks being separate from the white. The only way I can eat them separate is in hard boiled form, but even then there cannot be even a hint of translucency in the yolk or I am totally grossed out. Therefore it has to be scrambled for me, and I've even thrown out sandwiches where the egg was not perfectly blended. Even thinking about this is making my stomach turn, so I'll stop.
Anyway - scrambled with bacon, american cheese and lots of hot sauce for me, on a toasted roll of some kind.
I like fried eggs over medium. The runny yolk is yummy, but if there is even a hint of runniness to the white, I am majorly grossed out. I also am not a big fan of scrambled eggs, though if there are veggies (especially broccoli and tomatoes) and cheese with them, they're fine. So, my preference for sandwiches is fried over medium, but I'll eat scrambled sandwiches if there are cheese/veggies involved.
I can't abide by runny yolks, but since others have been offering up their egg sandwich versions: lately I've been adding onion jam to my egg sandwiches! Onion jam that was inspired by a bout of Farmer's Lunch Sandwiches:

I love a fried egg sandwich on toasted, hearty bread (ciabatta is nice) with cheese, sliced tomatoes, mayo, salt, pepper and definitely with a runny yolk. There is something so decadent and rich about runny egg yolk.
I'm shocked that the only kind of egg sandwich that you've had was with the egg "Sunny Side Up". I've only ever had it scrambled, and the thought of runny yoke dripping from the sandwich is both gross and unnecessarily messy. The way I like my egg sandwich is simple, really. Just smear some light mayo on the bread with some scrambled eggs (one egg per sandwich), and it's a cheap and easy breakfast or lunch.
What about hard boiled eggs?! In the UK, if you ask for an egg sandwich, a hard boiled egg with mayo or salad cream is what you would be given. (I think Americans call it egg salad?)More often than not, it is accompanied with cress.
I personally like mashed hard boiled egg, mixed with a little butter while still warm, and spread in a nice soft roll.
