Where I grew up egg salad is almost always made with green olives. It is such a delicious combination that I am constantly confused as to why this is not the norm. Mayo, green olives and season all. These variations do look great though.
To me, egg salad is comfort food. If I did't use my plain old family recipe, I wouldn't be comforted.
