Eat This! Couscous with Caramelized Onions & Tomatoes

Does this dish from Cheryl at 5 Second Rule not look like the very, very best thing to eat, right now? Israeli couscous, dark caramelized onions, lush and colorful cherry tomatoes, a yellow spoonful of turmeric... Are you like Cheryl? Do you have just a few tomatoes left — or perhaps a whole lot of them, clinging to the vines and waiting for a last burst of Indian summer to ripen them? There certainly were lots of heirloom tomatoes at the market this past weekend, and we could imagine them tossed in this couscous dish. This is just so appetizing right now ‐ the dark, rich flavor of caramelized onions makes this transition into fall, with the bright tomatoes still echoing summer.
