Are you like Cheryl? Do you have just a few tomatoes left — or perhaps a whole lot of them, clinging to the vines and waiting for a last burst of Indian summer to ripen them? There certainly were lots of heirloom tomatoes at the market this past weekend, and we could imagine them tossed in this couscous dish.
This is just so appetizing right now ‐ the dark, rich flavor of caramelized onions makes this transition into fall, with the bright tomatoes still echoing summer. It could be a side dish or a vegan main dish, too.
