Another good (& healthy!) one is homemade bite sized lara bars. If you have a food processor it's easy - one part raw nuts to one part dates, plus any flavoring you like. One of my favorites is cashews, dates, and fresh vanilla bean seeds with sea salt sprinkled on top. Like a healthy salted caramel!!
I looked at the coconut balls recipe, as I am utterly obsessed with coconut, and now I have to know what coconut creme concentrate is! they said is is the consistency of peanut butter. Which means I could make everything with it! Any ideas where to find it?
Some of the non-meltable options seem like great ideas for an evening at the beach... I'm making them for the weekend! Pacific coast here we come.
