The potato is a stalwart cooking companion. A single spud can be a meal for one or it can stretch a soup to feed unexpected guests. I make sure to have a few in the pantry at all times and use them for easy no-brainer dinners when my other meal plans go awry.
1. Roasted Potato Tacos with Creamy Dressing - Gussy these up with avocado, roasted red peppers, and a sprinkle of cheese for a full meal.
2. Potato, Red Pepper, and Feta Frittata - I make this one almost every week and keep it interesting with other veggies and different kinds of cheese.
3. Baked Potato Soup with Onion, Bacon, and Cheddar - So rich and so satisfying on a cool night.
4. Potato and Cauliflower Curry - A short-cut curry that can be made any night of the week.
5. Grilled Potato, Gorgonzola, and Prosciutto Pizza - This combination of flavors never grows old.

This comes at the perfect time. I ordered 4 kgs of potatoes (couldn't resist the buy-1-get-1-free offer) and need to start cooking!
Roasted Potatoes with garlic and parmesan cheese, toss in arugula, shredded kale or dandelion greens to wilt and then toss it with tahini mixed with lemon juice and a fresh herb.
I love to make shepherd's pie when I have leftover mashed potatoes. Just throw some meat, veggies, and sauce in the bottom of a dish, top with the mashed potatoes, and broil until yummy.
I love saag aloo when I have a few potatoes to use. It's simple but rich.
I just made this crispy potato roast with yukon golds, sweet potato, and herbs from the garden. Really good... to make it into a more complete meal I had it alongside some Greek yogurt.
Jennybean, I make a vegetarian version of that dish with lentils and tomato sauce. It freezes and reheats well, too.

I cannot keep potatoes from sprouting. What tips do people have (I keep them in the dark but not in the fridge)
A favorite at my house:
boiled potatoes, sliced while still warm
a can of good tuna, drained
chickpeas
very finely chopped onion
chopped fresh parsley
good olive oil
Fresh cracked Sea Salt and Pepper
Toss together, serve still warm in bowls.
add some crusty bread on the side to sop up the olive oil and onion - yum!
