Just mash up some goat cheese in a bowl, add a few squeezes of fresh lemon juice, some lemon zest, and a palmful of chopped parsley (or another herb... chives would be good). Mold the mixture into a ball, then sprinkle some salt and drizzle a good olive oil over the top before you serve. It goes great with crackers or vegetables.
The friend who taught us this recipe also adds toasted pine nuts, for those of you who want a little crunch. Prettier than your average cheese ball, no?
