With spring almost at our doorstep, it's time to put away the kale and lean on lighter, brighter greens, like arugula. Although it's easy to find the peppery, pungent leaves at your grocery store year-round, it's actually an early spring vegetable, which means there is no better time to start loading up on it. Here are 5 great recipes that celebrate arugula.

1. Ham, Brie, Marmalade, and Arugula Pressed Sandwich

A sandwich made of salty ham, creamy brie, and sweet marmalade could lean a little too rich and heavy if it wasn't for the handful of arugula that's pressed inside — its peppery kick provides the perfect balance, along with that wholesome fleck of green.

2. Arugula, Pear & Blue Cheese Salad with Warm Vinaigrette

Take advantage of the coming and going of two different seasons with this salad. Pears are about to be replaced with spring fruit like strawberries, but before they are gone make this light and easy salad that's dressed in a warm honey-mustard vinaigrette.
