Ah, the gin and tonic. Unless you're clean and sober, you cannot say you've experienced summer until you've come home from a long, hard day at work on a sweltering summer evening and promptly made yourself a G&T to enjoy on the back porch or next to the air conditioner turned full blast. The bitter tonic, the herbal gin, the refreshing lime. Perfect!

While the G&T is a classic, when I crave a slightly less potent but still refreshingly bittersweet drink I go for the Aperol Spritz, a heavenly concoction of Aperol (a slightly less bitter Campari), prosecco, club soda, and a wedge of orange. The cocktail's bitter orange flavor, combined with the nose-tickling sparkle of the prosecco, and the lively orange hue of the Aperol wakes me right up, like a run through a backyard sprinkler.

In general, a touch of bitter in a summer cocktail is the way to go, be it a G&T, an Aperol Spritz, or any number of Campari-based drinks. Refreshing and bracing, bitter cools us down and, let's face it, adds a touch of sophistication to our sweaty, work-weary evening. Bitter flavors perk up our palates, brightening and enlivening our tastebuds for the meal to come.

What refreshing cocktail do you reach for when the days are long and hot and you need some bittersweet relief?
