This is the time of year, replete with picnics and cook-outs, when there always seems to be a quarter of a watermelon languishing in the fridge. We adore ice-cold watermelon, but one of these ponderous fruits is far more than our household can consume. Instead of slipping the last mushy slices into the compost bin, though, we've been using them up in a much more delicious fashion: over ice in a frosty glass!
Watermelon, even when it's getting over-ripe and mushy, is always good for a blended drink. If you have some watermelon getting a little soft in the fridge, cut it into cubes, pop it into the blender, and sip away. We like ours mixed with lemonade (or frozen lemonade!) or mixed up into a watermelon mojitos. You can also make popsicles out of the juice, or make a drink with fizz.

Otai! It's a Tongan beverage, I think. At any rate, it's wonderful: Crushed watermelon, crushed pineapple, coconut milk and a little bit of the pineapple juice, all served over ice. Oh yum.
Chilled watermelon soup! Good as a fun appetizer or an unusual dessert.

My watermelon does not stay around long enough to become mushy. Seriously...mushy watermelon? Never heard of it.
wunami -I agree! I eat mine way before it has the opportunity to get mushy :) but now I think i'll have to let it sit and mush because this sounds tasty!
I freeze it overnight, throw it into the blender with some mint, simple syrup (to your taste), and vodka. Delicious adult smoothie every time.
Yummy! I never thought of making a watermelon drink, but then i got it from the Red Hook vendors at the Brooklyn Flea one Saturday this summer. So good and refreshing! I like the idea of an adult version too :-)
This looks so much better than Au Bon Pain's watermelon lemonade (SO NOT worth the money!).
Last night I cut a big watermelon in half and just ate most of it by scooping it out with a spoon.
I also like watermelon with white bread...a strange combination, but brings great childhood memories.
I had watermelon juice when I was in Brazil and it was absolutely wonderful! It's a great idea.
