I was recently in Prague and had a dish called "beer cheese." It was some type of somewhat strong flavored cheese, raw onions, mustard and paprika all mashed together. This was served at many bars I went to and I was informed it was a very traditional Czech dish. In short it was amazing.
I want to recreate it at home but I have no idea what the base cheese was that they used. Hoping you might be able to help out.
