Q: I had a great Alabama white sauce at Dixie Bones BBQ in Woodbridge, VA. Do any of your readers have a good recipe?

Editor: Jenna, not only have we never tried Alabama white sauce, we'd never even heard of it until we got your question! Now that we know about the existence of this unusual regional barbeque sauce — which is mayonnaise-based rather than tomato- or vinegar-based — we're just as eager as you are to learn readers' favorite recipes for it.

No idea if it's particularly authentic- but I've been going with 1 cup mayo, 1/2 cup apple cider vinegar, 1 T pepper, and the juice of 1/4 of a lemon. I add more lemon, vinegar, or mayo as needed. It's great with smoked chicken!

This was just posted in the Minneapolis Star-Tribune 'Taste' section a week or two ago. I have not tried it.
'BAMA BARBECUE SAUCE
Makes about 11/4 cups.
Note: This quick and easy sauce is made with mayonnaise and infused with a generous spoonful of black pepper, which you can reduce in quantity if desired. For best flavor, remove the sauce from the refrigerator and let it warm up a bit while you cook the meat or fish. Then slather on the sauce and serve.
• 1 c. mayonnaise
• 1/2 c. cider vinegar
• 2 tbsp. lemon juice
• 1 garlic clove, or more if desired, crushed
• 1 tsp. finely ground black pepper, or less if desired
• 1/2 tsp. salt
• 1/4 tsp. ground cayenne pepper, or more if desired
Directions
In a small glass bowl or jar, combine all the ingredients. Mix well and refrigerate until ready to use.
I call this coleslaw dressing.
Sounds creamy! I've been to Dixie Bones and adore their bbq ribs. I don't know that I remember seeing this bbq sauce on the menu but I will definetely order this next time!
I don't think I've ever measured quantities but I mix (roughly) a cup of mayo, a third of a cup of white vinegar, the juice of a half of a lemon (or a lime if you realize at the last minute that you don't have a good lemon), a sprinkle of salt and a boatload of black pepper. If the mixture isn't a little bit looser than maple syrup, I add more vinegar. The sauce needs to be kind of thick but it needs to flow. Use a whisk or it will get clumpy.
Cook's Country/ATK Alabama White BBQ Sauce
3/4 cup mayonnaise
2 tablespoons cider vinegar
2 teaspoons sugar
1/2 teaspoon prepared horseradish
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
