Last week Deb from Smitten Kitchen posted a fudge pop recipe with some particularly enticing photos that had people talking. At its core, it's a simple and familiar recipe -- nothing we haven't seen before. But there's something about the beginning of June, warm evenings, and the possibility of summer that can make us all feel like kids again.
So to celebrate summer, we thought we'd put together a list of some of our favorite fudge popsicles to kick off frozen dessert season (if there really is such a thing). Recipes range from simply freezing hot chocolate that has cooled to using fancier mix-ins or blending together interesting flavors to create an unforgettable summer popsicle. I bet those mocha popsicles are delicious! I don't have a favorite recipe, but i'd like to experiment making pops out of yogurt/fruit/jam.

You can also modify any Agua Fresca, yogurt, sorbet, sherbet, kulfi, or ice cream recipe for popsicles.
I've found intriguing recipes in Martha Stewart's magazines, Sunset Living, Real Simple, and so on. Online searches (popsicle recipe, pop recipe, ice pop recipe, paleta recipe, etc.) or magazine stacks/fiche in your library are all options.
Great timing! It just hit the 90s this week and all I'm thinking about is frozen treats! I'm definitely making this.
I adapted the banana ice cream idea to make fudgesicles (which, if it's your thing, are vegan and can also be raw). At the simplest: frozen chunks of banana whizzed up with coco powder and a little simple syrup. My favorite so far used the cup of coffee I forgot to drink, reduced with a little sugar (1-2 tbsp) into an almost syrup...I then stirred in about 2 tbsp of Dagoba's xocolatl mix (a hot chocolate mix low on sugar, but with added chiles and cinnamon) to allow the powder to dissolve. After that cooled, I blended it with the frozen chunks of about 2 bananas, poured the ensuing mixture in my popsicle molds and froze it. Voila: almost healthy spicy mocha fudgesicles.
I recently made some Nutella fudgesicles: 1 cup milk and 1/3 cup Nutella warmed and mixed. I used the blender after warming them up a bit in a saucepan. Then just pour into the fudgesicle molds! They're really wonderful.
