The recipe for these wraps has you roast the eggplant and other vegetables in the oven, but I think I'll grill them outside instead and keep the kitchen cool. That smoky flavor might be even better with the chickpeas and mozzarella in the recipe!
And this strawberry granita from a back-issue of Bon Appétit is everything I love about granitas. The strawberries are front and center. They're simply blended with a little sugar and water until smooth and then frozen into snowy goodness. A scoop of this should make a refreshing end to a light summer meal.
