The first eggplants of the season arrived at my local farmers market this weekend, and you can bet I swooped right in
and grabbed some! I have my sights set on these simple wraps with zucchini and mozzarella from Martha Stewart followed by a scoop of strawberry granita. Care to join me?The recipe for these wraps has you roast the eggplant and other vegetables in the oven, but I think I'll grill them outside instead and keep the kitchen cool. That smoky flavor might be even better with the chickpeas and mozzarella in the recipe!
And this strawberry granita from a back-issue of Bon Appétit is everything I love about granitas. The strawberries are front and center. They're simply blended with a little sugar and water until smooth and then frozen into snowy goodness. A scoop of this should make a refreshing end to a light summer meal.
