Do you have a cast iron skillet and an hour to spare? Then you should make this cilantro lime chicken. Serve it with some corn on the cob and an icy-cold drink, and you've got the perfect summer dinner.

This chicken is loaded with flavor. You first season the thighs with a spice mix, then throw them in the hot skillet until they turn a deep golden-brown. Then you remove the chicken from the skillet and make a pan sauce with wine, chicken broth, lime juice, and garlic. The chicken takes a final dip in the sauce to finish cooking, and then all that's left is the generous sprinkle of fresh cilantro over top.

The most crucial part of this whole dish is not letting that delicious sauce go to waste. Use some crusty bread to mop it up, or ladle it over rice!
