All these soups look so good! That's the kind of 'comfort' food I like! My last discovery in the 'soup world' is a Roasted Acorn Squash Soup with Maple syrup...delicious! (I received this recipe when I adopted a maple tree with Rougemaple. I had the opportunity to try it out with the organic Maple Syrup they send when you adopt a tree). Thanks for sharing all these other options: I'll certainly try some of them!
Pack away those appliances?! HECK NO! I don't have air conditioning, so when hot weather hits, I move most of my kitchen to my covered porch or garage! With a slow cooker, rice cooker and toaster oven outside I a. don't add any heat to my home and b. barely have to monitor my cooking! Plus, almost everything tastes better as cold left overs!
I've got a couple, too. This is a great time of year to make soup, because the produce is exciting, and the evenings are still cool.
My favorite recent soup had quinoa, spinach, zucchini and chickpeas. Flavored with thyme, nutmeg and cinnamon.
I made to taste like camping! Smoky, earthy, sweet and ferny. It's roasted beet & tarragon bisque.
And, finally, soup meagre, which is a soup with every green thing thrown in. It's different every time of year. Springtime is lovely little lettuces and new herbs. Yum!
