Q: My mum, being the good Irishwoman that she is, gave me a corned beef not long ago. It's sitting in my freezer waiting to be cooked, but my boyfriend hates cabbage and potatoes, so I'm really at a loss for what to do with it!
Any good side suggestions?

Editor: Sarah, does your boyfriend hate all potatoes? Even buttery whipped mashed potatoes? If not, try making them extra-indulgent. Otherwise, what about using the corned beef in fillings for calzones or hand pies, along with some Cheddar cheese?

You could make something akin to a montreal smoked meat sandwich, I thought those tasted just like corned beef.
Maybe something like a carrot puree? And then hash & eggs the next morning, yummm
All things Reuben -- sandwiches, casseroles, soup, pizza, etc.
I'd suggest a new boyfriend myself. Anyone who doesn't like potatoes and cabbage with corned beef must be a bit off... :D
LOL @ qhartman, my husband doesnt like corned beef... which is OK by me, since I dont have to share! Then I can have all the corned beef sandwiches I want! :)
These carrots and parsnips. I made them along with mine last year and they were awesome. I've been meaning to make them again, but it's just to hot here. (109 today...)

I didn't put nearly as much whisky in as the recipe called for... but I suppose alcohol is always to taste. I also put the parsnips in a bit latter than the carrots, the parsnips cook faster and will be soggy if you leave them in forever.
Or you could get a new boyfriend. :)
I second the rice pilaf (or any grain pilaf really), with greens (kale, kai lan, spinach, chard, collard greens) sauteed in butter... that gives you the texture of cabbage without the bitterness that some people find unpleasant.
There is a recipe on 101cookbooks for shredded carmelized brussels spouts which goes well with corned beef, but its possible that someone who doesn't like cabbage also might not like brussels.
Don't share your corned beef with him then! Instead make a soup with corned beef, potato, and cabbage with a little apple cider vinegar and freeze it for work lunches. A local cafe (Clementine - Los Angeles) makes a great version.
