We certainly don't need to say that pork belly is a trend at the moment. It has made quite the comeback. Even people we know who rarely cook are now in the pork belly trance and just last night — my fiance took a stab at cooking it himself. The pork belly didn't turn out quite as he expected, but he's willing to give it another try. I told him I'd help out this time and of course turned to TheKitchn to find some inspiration. We're leaning towards trying the Japanese Braised Pork Belly (Buta no Kakuni) recipe!
