We certainly don't need to say that pork belly is a trend at the moment. It has made quite the comeback. Even people we know who rarely cook are now in the pork belly trance and just last night — my fiance took a stab at cooking it himself.
The pork belly didn't turn out quite as he expected, but he's willing to give it another try. I told him I'd help out this time and of course turned to TheKitchn to find some inspiration. We're leaning towards trying the Japanese Braised Pork Belly (Buta no Kakuni) recipe!

Made 5 spiced braised pork belly last week, along with homemade steamed buns. Add sriracha spiced mayo and ginger pickled carrots and onions and we were happy diners.
