GenerallyI don't find soups terribly beautiful. Delicious, definitely, but your standard leek and potato soup isn't going to shine above a more colorful dish on the table. This broccoli soup, however, is a different story. With swirls of creamy tahini and a sprinkling of pine nut za'atar, it deserves to wear the winner's crown.
The soup gets that bright green color from a handful of Swiss chard, but you could use spinach for a similar effect. This would be perfect for a dinner party or just a fancy-lookin' lunch for one.
