The goal of the Cooking Cure is to help you find the resources you need to make the meals you want to eat. So in these last few days of the Cure, I'm going to bring up some reader cooking challenges from the first few days to keep the energy flowing to your breakfast and lunch endeavors.
Here's a great one from Ketherian, who wants to eat more fruits and vegetables with breakfast. Can you help?
One of Ketherian's goals during Breakfast Week was:
Eat more fruit and vegetables. My breakfasts are very grain or egg heavy. I need to shake this up.
Can you help Ketherian? What are some of your favorite ways to pack fruits and vegetables into breakfast?
I often just throw some blueberries or banana onto my morning cereal; I'd love to go beyond this too, though. Tomato on toast, zucchini in an omelet, how else do you stuff veggies into the first meal of the day?
