The Challenge: I have a container of mascarpone that I bought a little while back with no intentions of what to do with it. Well, it's still in my frig! I have some vanilla and chocolate pudding packages lying around, some graham cracker crumbs, frozen pumpkin puree, frozen berries, limoncello and Bailey's liqueur, and a container of heavy cream.
So I could go in many directions and want to get rid of some of this stuff with a quick dessert but don't know if mascarpone can be stirred into pudding to make a creamy dessert. Any ideas?

You could whip up the cream and fold in some softened mascarpone and a little powdered sugar. Layer this with some of the pudding and berries in a wine glass or sundae cup with some graham cracker crumbs on top or layered in with the other items.
You could also take this same idea and make it in a pan. Mix a little butter and sugar with the graham cracker crumbs, press it into a pan and bake it until it's set. Let it cool and then add your layers of pudding, whipped cream and mascarpone, and then the berries on top. You could drizzle a little limoncello on top if you like or just serve it on the side.
I'll google mascarpone and Giada or look on the foodnetwork web site for recipes. I know Giada uses it pretty regularly in her desserts.
I usually use mascarpone in fruit tarts...Add a little cinnamon and sugar and bake in a tart shell and place berries on top. A simple dessert but really tasty and can look incredibly elegant.
Do you have cocoa powder? I always find myself with half a tub leftover from some great endeavor, and the best way to use it up in my opinion is mixed into a baked good!

Or the mascarpone would probably be nice whipped into the vanilla pudding with maybe a splash or two of limoncello and then layered with fruit to make parfaits.
I put it in risotto to make it extra creamy.
Here's a quick little dessert for a crowd: get those phyllo-dough frozen tart shells. Fill them with sweetened marscapone. Macerate the berries in some limoncello and then put on top. Heat according to phyllo-package instructions. Viola!
Use the graham cracker crumbs and some melted butter to make a pie shell and pre-bake, then mix the mascarpone with some whipped cream or thin it to spreadable consistency with a little heavy cream and some sugar, soak the berries in limoncello, then spread the mascarpone mix on the baked pie crust and top with berries. Chill and serve. Instant fruit tart! :)
please do not corrupt a gorgeous mascarpone by introducing it to packaged pudding mix. that would be sad.
think of it as fancy cream cheese. works well in sweet and savory dishes.
Pumpkin puree plus mascarpone and some parm and an egg would make a stellar ravioli filling. garnish with browned butter and fried sage leaves. yum.
Tiramisu is my favorite dessert, so I would do that or an abbreviated or fruited version of same.
Marscapone Bailey's sounds like the beginnings of some delicious Tiramisu-type concoction!
Be careful; mascarpose goes bad FAST. If it's been in your fridge "a while," be sure to give it the sniff test before using!
Add a some to hot polenta.
You can put it on toast with your jam.
Or for a more savory approach, with bow-tie pasta and mushrooms. Makes pasta nice and creamy.

stir some lemon curd into the mascarpone and dip fresh strawberries in it!
