We showed you noodles this morning, and cucumbers at lunchtime. Now we've got a surprising mashup of the two: Cucumber noodles!
There's no linguine or spaghetti pictured up above. You won't find soba or udon in the ingredient list. Nope, those noodles are cucumbers, plain and simple. They are created with a mandoline or slicer with a julienne blade.
The cucumber noodles are blanched briefly, then cooked for a scant minute or two with mint, butter, pepper, and lemon.
This is so unusual (cooked cucumbers!) but it sounds refreshing and substantial enough for a light dinner. We're going to try it! Have you ever made these?

Ooh, I'll have to try that. My dad used to make Chinese-style stir-fried cucumbers with garlic, soy sauce, and rice wine vinegar.
Sounds delicious but since cucumbers are mostly water, you'll probably want to pair this meal with some protein or you'll be hungry again soon. I would definitely make it for a summer potluck though as a side.
Both times I've tried cooked cucumbers in any form (besides pickles), I've decided they weren't meant to be cooked. Maybe I'll give them one more chance.
I've never had, or even considered, cooking cucumber like this! I'd definitely be willing to give it a try though, it looks great! I like to slice cucumbers like this, I call it "cucumber ribbons" and add them to salads, pasta salads, etc. just because it looks pretty!

There is a Thai sweet and sour dish with chicken (or tofu), plus tomatoes, cucumbers, scallions, and pineapple. That is how I discovered cooked cucumbers could be good.
I've made Julia Child's baked cucumbers and they were fantastic- it's just too bad that it's often so hot when cucs are so plentiful.
