Made some last week that I was really happy with and intend to experiment with further. Took a half head of cabbage and halved that, halved a couple of whole onions and placed these on the barbecue grill - just long enough to soften them slightly and get some grill marks. Chopped the grilled cabbage and onions, added some honey, rice vinegar, and salt. Thought the resultant slaw was really good and certainly simple. Will think about adding some other elements next time... Cumin seeds, grilled jalapeno, lime zest,.... hummmm, fun to experiment!
I just made a blue cheese and apple slaw this weekend. It's one of the best slaws I've had and it's quite simple, with only 6 ingredients: slaw veggie mix, apple cider vinegar, granny smith apples, mayo, blue cheese, and blue cheese dressing.

If you like sweet coleslaw, I have a really simple, easy recipe. Take a can of crushed pineapple and drain the juice off. Mix the juice with mayo to make a thin sauce. Stir the pineapple with the cabbage, and add the sauce. This also works really well for carrot salad, just stir a few raisins in as well. If you start with a bag of preshredded carrots or cabbage, you can make this in just a few minutes.
I'm making the peanut slaw for a potluck tonight. I make it at least 10/year, it's so easy, always gets compliments, and the leftovers are great stir-fried with soba noodles
I recently learned that sweet potatoes can be made into coleslaw: just soak the grated veg in ice water for a few minutes first. Here's a tasty recipe with almonds and apples.

I love making slaw with red cabbage at this time of year. My recipe: red cabbage, shredded carrots, craisins, and perhaps some cashews. Add red-wine vinegar, extra-virgin olive oil, and a little sugar, mix it up, and voila! Super easy, and super tasty!
i like to jazz up my traditional-style creamier coleslaw with julienned jicama! so tasty and unexpected. i've also figured out how to adapt the dressing recipe so it can swing more towards an asian slaw, which i like to add sliced sugar snaps to. so fun to play with slaws!
