Chickpeas are one of my absolute favorite things to eat. You can eat them dried, cooked, plain, with salt — you get the idea! The fact that they can be used in so many dishes is exactly the reason why it was so fun and easy to find dishes that put chickpeas on a pedestal.

Floral Drink Dispen...

I loooove chickpeas too. I like to add the canned pre-cooked kind to the last 5-10 minutes of this roasted veggie dish I make with olive oil, balsamic vinegarette and herb seasoning of choice. It's a good (and quick) way to make the roasted veggies into a heartier meal in my opinion and it's very yummy.

I used to work with a guy named Bruno who was a bit of a body builder and a self-styled ladies' man. Bruno would always extoll the virtues of chickpeas by tapping his abs forcefully and proclaiming "Chickpeas make you hard as a rock!" Then with a wink and a devilish grin, to make it clear that he was now referring to a part of his anatomy other than his abs, he would repeat, "Hard as a rock!"
To this day, I cannot eat chickpeas (or serve them to my husband) without a little chuckle and thoughts of Bruno.
