Q: I've been given a huge bag of lentils and couldn't come up with an idea to cook them other than lentil soup.
Do you have any creative ideas to cook them?

Editor: Daniella, how about a lentil salad? Cook the lentils just until they are barely tender, then toss with an olive oil dressing, some herbs, and perhaps some crunchy vegetables. Here's a good recipe:

The recipe uses red lentils, but any other kind would work as long as you cook them until they're very soft.
I also like to make chili with lentils instead of, or in addition to, beans. Great texture.

I second the chili idea. I make it with lentils all the time and love it. Plus, the leftovers freeze really nicely.
Along those lines, lentil tacos are good (with lentils in lieu of meat).
Lentils pair well with rice. Can use in Indian dal dishes - or - think of cooked lentils as ground beef and use in taco filling. Lentils not only pair well with rice but they go well with Imagination!
OH! Someone already mentioned Sloppy Lentils (Joe). Its super good and freezes well. I got my recipe from vegweb, but I'm sure there are others.
Boy, I think I might have to make lentil walnut burgers for dinner now. And I always forget to use lentils in tacos... making a mental note.

I really like lentil salads, and I'm very fond of this recent lentil and kohlrabi salad I've been making.
Indian dal.
I like to make a really simple rice dish with lentils (cook 1 cup dry), white rice (cook 1 cup dry), spinach (10 oz, steamed), tomatoes (1.5 cups), dill (.5 cup fresh), and olive oil (to taste). It's good on its own, in stuffed peppers, or over lettuce for a lighter salad version.
Lentils are also good in tomato-based pasta sauces, to add heartiness without meat.

We love lentil tacos, they make a great replacement for the ground beef.
1 cup lentils
4 cups vegetable broth (or water)
1/2 packet taco seasoning
Bring to boil, simmer for about 30 minutes (until tender).

I was just going to say what jackyh said -- use them in anything you'd use ground beef. Tacos are one of my favorite uses for lentils. I also like them on nachos and in pot pies.
I make a lentil salad that's basically cooked lentils, avocado, cut grape/cherry tomatoes, olive oil, vinegar, salt and pepper.
Mmmm I love lentils. Two of my faves are Vegetarian Moussaka and Mujadara.

Mujaddarah is a weekly staple in our house. From my Palestinian mother-in-law: 1 cup lentils, 1 cup rice (I use brown). Cook in plenty of lightly salted water until done, about 40 min. Drain; coat in plenty of EVOO.
Then: Saute 2 or 3 onions until golden and charred in places. Also make a salsa of 1 finely chopped tomato, 1 finely diced cuke, juice of 1/2 lemon, evoo, s&p.
Top bowls of mujaddarah with the sauteed onion and salsa. Serve with plain yogurt on the side. Easy, cheap, and healthy!!
One more: cook 1 or 2 Italian sausages; slice and set aside. In the sausage fat, saute 1 diced onion and 2 cups cooked lentils. Add tarragon and s&p to taste. Serve lentils topped with sliced sausage and dolloped w/ Dijon mustard.

we make daal all the time, its my favorite. But the easiest thing to make is lentil tacos. Even my four year old loves them. You just put taco spices (we dont use the packages, but you could), and cook them until they are to your desired doneness. 1 cup of lentils can feed 3 people for 3 days at our house!
You can sprout lentils! It increases their nutritional value and digestability. They're great as a snack or on salads or sandwiches.

Lentils taste awesome as a side with tuna! Toss them with finely chopped red onion, parsley and lime juice for a kind of salsa-thing to go with a good tuna steak, or you can flake the tuna right in there with some rocket for a very tupperware-friendly lunchbox salad :)
Both the Snobby Joes and Tamarind Lentils in Veganomicon are staples in my house.
I've used left over lentil stew to make little savory hand pies or appetizer bites with either pizza dough or pie dough. Either cook down or strain out most of the liquid before filling. You could make lentils specifically for them as well. Makes a great meal with a salad or soup!

Don't forget you can sprout them, too, assuming they're not broken. I love fresh sprouts, and when you grow them at home, you don't have to worry about food-borne illness.
There is a super delicious Lentils and Rice with Carmelized Onions recipe in Mark Bittman's 'How to Cook Everything.' It is simple (lentils, onions, garlic, cumin, salt, pepper, and olive oil) and you get a ton of leftovers. My 3 year old loves it too.

I'm not picking on you, but that's not actually correct. Contaminated sprouts of any type often had the bacteria *inside* the bean, it had nothing to do with how the bean was handled. Yes, you have a bit more control over the process, but it seems that sprouts are sadly not as "healthy" (or healthful) as previously believed.

I use Applegate Farms organic smoked pork kielbasa for the sausage, organic French lentils for the lentils, and 1 tsp dried thyme instead of the rosemary. Serve it with hot, buttered sourdough toast. So good!

Lentil soup, made based on a recipe in either my Adequate Housekeeping or Better Homes and Garbage cookbooks; no tomatoes, but lots of onion, garlic, some pearl barley, chicken broth and if I recall correctly, some poultry seasoning, bay leaf and rosemary (the last two in a tea ball reserved for such a use).
