[This week, Stacie, our Los Angeles correspondent, brings us a simple way to roast cauliflower.]
When I need a quick and delicious side dish or a main event for vegetarian friends, one of my favorite ways to prepare this flavorful and pretty veggie is to roast it with an Indian inspiration. Enjoy with saffron rice and lentils or, for carnivores, it makes a great accompaniment for steak.
Indian Roasted Cauliflower
Serves 4 as a side dish
One head of cauliflower
Kosher Salt
Red Chili Peppers
Olive Oil
Preheat oven to 350°F
Cut up one head of cauliflower in to fork friendly pieces
Place cauliflower on foil covered baking sheet and generously pour olive oil over cauliflower.
Spinkle with salt and chili peppers. Place in the oven and roast for about 15 minutes. Using tongs, turn over the pieces of cauliflower to prevent burning and recoat them with oil.
Roast another 25 minutes, until tender and slighly carmel colored.

how is this Indian?
You'll note it says Indian inspired. The headline may be misleading but basically the spicy quality and the ghee (or olive oil) make it a good time saving alternative when you can't spend time making aloo ghobi or a curries.
I don't really see how red chili peppers alone make this even remotely Indian inspired. A more accurate name would be spicy roasted cauliflower
Thanks for sharing this recipe. I am indian and my mother makes roasted cauliflower on the stovetop with exactly the same ingredients (She can't cook anything but indian food and I don't see why you can't call this an Indian-inspired recipe). The only extra ingredient my mom adds is a pinch of turmeric. She roasts them in an open pan on a low flame for like ever. Oven-roasting sounds like a great option. Will definitely try it out, though I might just toss the veggie in the oil and spices before sticking them in the oven (yup, I am that lazy :). Thanks again.
