How much do we love the sharp, zesty flavor of arugula? Answer: a whole lot! Arugula is really one of our favorite greens to come out of the early warm months. It seems to add just the right touch of fresh summer flavor to whatever we happen to be making, whether it's salad or pizza or pesto!
1. Arugula with Orzo and Garden Tomatoes - Very simple no-cook pasta for a warm summer evening.
2. Potato Salad with Yogurt, Arugula, and Dill - We just made this for dinner again last night. So good!
3. Cream Cheese and Arugula Toast Bites - Perfect for an afternoon snack or a simple dinner party appetizer.
4. Egg, Arugula, and Herb Tartine - Quickly sautéed over high heat, arugula takes on new character.
5. Wilted Arugula and Pear Salad - Bold flavors make a very satisfying salad.
6. Strawberry-Arugula Salad with Lemon Ricotta - Spicy arugula pairs amazingly well with sweet summer fruits.
7. Arugula Vichyssoise - Arugula adds another layer of flavor to this classic chilled soup.

I have never tried arugula, but these recipes will have to change that. I know how glad I am to have discovered romaine lettuce and spring greens. I always hated salads as a kid and I found out later, as an adult that this was partially because I do not care for iceberg, which was the only lettuce people considered when I was growing up. So, I'm gonna have to give arugula a go. Thanks for the great ideas!
While in Italy last month, one of the best things I ate was a simple sandwich of focaccia, artichokes, and arugula.
I just made an awesome pasta with arugula...So good! & easy too!

Lunch today: chopped up arugula, lots of chickpeas, nice canned tuna, lemon zest, lemon juice, olive oil, sea salt, and lots of black pepper with pita chips. Yum! I love arugula too...
I had the most amazing arugula from the farmer's market in Woodstock, NY over Memorial Day weekend. I think it's spoiled me for any other arugula ever...the stuff at my local farmer's market always looks so wilted and ratty, and the stuff from the supermarket just has no taste... Sigh, because I really love arugula, probably my favorite green...
