One look at this recipe from The Naptime Chef, and I immediately started calculating when I could get to the farmers' market to buy some juicy summer peaches. Have you ever had roasted peach lemonade? The Naptime Chef was inspired by a drink she had at the Auburn Street Market in Atlanta, calling it "the most delicious lemonade I'd ever, ever tasted. What made it so unique was that it was made with roasted Georgia peaches. You could actually taste little bits of peach in every slurp."
I love the idea of roasting the peaches to intensify their flavor. After roasting them for about 30 minutes, she pureed the peaches in a blender and mixed them with lemonade. I'm thinking of adding a splash of Balsamic vinegar or saba to the roasting peaches, and garnishing the drink with fresh basil or thyme.
