Palm-sized and picnic-ready hand pies are all the rage this summer. We have a feeling that eating these pies might be slightly more enjoyable than assembling a whole batch of them. These lattice, apple, and star pie molds from Williams-Sonoma might help even things out!
With each of these molds, it looks like you use the outside as a cookie-cutter and the inside for filling and pressing the pies closed. The inside has a smooth depression so we can get the maximum filling into hand pie, which definitely gets our seal of approval!
We do wonder how easy or hard it is to position the pieces of pie dough in the mold and keep them aligned while you press. This seems like it should make the whole process easier and less messy, but it might be a different story in practice.
Still, for between $5 and $10 each, these molds might be well worth the gamble!

That apple pocket mold is adorable!

I bought one a couple of months ago and it is not easy to use although the results can be adorable. The plastic does not cut sharply enough to make the lattice separate cleanly. I end up mostly making a plain top and customizing it with one cookie cutter cut-out.
I also wonder how much slippage there is? It seems improbable that the bottom crust would perfectly sit centered in the mold while you are filling it.
My great grandmother must have been way ahead of her time. She'd save all the tins from pot pies and make us each our own. I'd love to make an individual pie in the lattice mold.
My friend ordered this and reported back. She said using the mold was generally easy. What she hadn't accounted for was how to bake them. See, the mold gives you a pocked pie with convex bottom. She made some rings out of foil and set the pies on the rings and then on top of a baking sheet before putting them in the oven.
