How are you staying cool? Cold salads and breakfast for dinner...
One of my favorite meals this summer turned out to be a delicious tofu salad. The only thing that was cooked was gently poached shrimp - which was barely cooked at all! I kept all the components chilled (including the plate) until I was ready to eat. It was deeeeelicious!

That looks like a gorgeous salad.
Over the weekend I made Tomato, Basil, Olive salad from fresh tomatoes and basil a friend gave me from his garden. No cooking required!
I also made an orzo salad with tomatoes, green peppers and basil. Lasts several days and only gets better :)
