If you're a regular reader, you already know how much we love knives. Yesterday, we were going on about the new Michel Bras/Kai knives. And last year we did a Gift Guide on knives.

In the recent issue of Cook's Illustrated, there is an Illustrated Guide to Kitchen Knives, and it's quite handy.

We agree that if you need any knives, it's a chef's knife, a paring knife, and a bread knife. Cook's breaks down each of these and gives their pick for the best buy. They also talk about sharpening, how to grip a knife, and basic knife skills such as carving and mincing.
