Cookies to Brownies: Best Fixings for Ice Cream Sandwiches

If there's one thing we love more than ice cream, it's an ice cream sandwich. It's one of those perfect desserts that is somehow more than the sum of its parts. We've got you covered with ideas for the ice cream. Here are a few ideas for ways to sandwich them!

1. Cookies - In our opinion, the cookies need to be either very crisp or very soft since chewy cookies tend to toughen too much in the freezer. Try our recipes for Chez Panisse Gingersnaps or Super Soft Snickerdoodles, though of course Chocolate Cut-Out Cookies will always be a classic.

2. Palmiers - These flaky spirals are made from puff pastry and would make an sweet little sandwich for a dinner party. Check out how easy they are to make in this post from Simply Recipes.

3. Graham Crackers - Cinnamony graham crackers go fantastically with a lot of our favorite ice cream flavors, including lemon, Mexican chocolate, or even just simple vanilla.

4. Super Thin Brownies - This is one that we discovered last summer. Brownies are slightly softer than cookies and have a great chocolate flavor.

5. Macarons - Ohio-based Jeni's Splendid Ice Cream makes their ice cream sandwiches with extra-large French-style macarons. These cookies are crisp on the outside and slightly chewy in the middle - and then you get to the ice cream. Simply brilliant.

While we're at it, why not roll those exposed edges of your ice cream sandwiches for an extra extra special treat! Sprinkles, leftover cookie crumbs, mini chocolate chips, chopped nuts, and crushed peppermint are all great choices.
