Daylight saving caught us totally off guard this past weekend, and we’ve felt a little grumpy about the diminishing hours of sun ever since. You, too? Perhaps a warm bowl of deeply caramelized onions in fragrant broth topped with a cheesy piece toast will help.
It’s hard to say what we love most about this dish. The tender, silky bits of onion? The rich broth in which they’re bathed? That wedge of cheese toast that starts off crunchy, but then slowly melts into the soup? We love it all.
You can’t rush French Onion Soup, either. It takes a good hour to coax those onions into caramelized glory. That doesn’t mean you can’t make it on a weeknight - just come to the kitchen armed with some cheese and crackers!
A recipe is barely required, as any mixture of caramelized onions and broth is bound to be delicious. But here are a few variations to get you inspired:
• Basic French Onion Soup from The Kitchn
• Red Onion Soup from Gourmet
• Onion Soup with Apple Cider from Epicurious
Do you love French Onion Soup, too? How do you make it?
