Daylight saving caught us totally off guard this past weekend, and we’ve felt a little grumpy about the diminishing hours of sun ever since. You, too? Perhaps a warm bowl of deeply caramelized onions in fragrant broth topped with a cheesy piece toast will help.
It’s hard to say what we love most about this dish. The tender, silky bits of onion? The rich broth in which they’re bathed? That wedge of cheese toast that starts off crunchy, but then slowly melts into the soup? We love it all.
