Thank goodness for noodles and pasta on hot summer days! They're easy to cook, wonderfully textured and filling, and delicious eaten straight out of the fridge. These nine salads (and one soup!) are, for the most part, quick to assemble and just perfect for lunch or dinner when the last thing you want to do is stand over a hot stove.
FIRST ROW
• 1 Cold Peanut Sesame Noodles – Sticky and nutty and great as leftovers
• 2 Bún Chay (Vietnamese Noodle Salad) – Refreshing contrasts of flavor and texture
• 3 Soba Noodles with Wilted Bok Choy – Perfect for a hot summer evening
• 4 Broccoli and Feta Pasta Salad – Delicious served warm or cold
• 5 Sumo Sunomono – With quick pickles of cucumber, carrots, and baby shrimp
SECOND ROW
• 6 Vegetarian Naengmyun (Korean Cold Noodles) – In an icy, vinegary-sweet broth
• 7 Joyce's Drunken Noodle Salad – A quick and tasty weeknight meal
• 8 Cold Soba, Sesame and Carrot Salad – Refreshing and addictively crunchy
• 9 Gơi Chay (Vietnamese Vegetarian Salad) – A light yet complete meal
• 10 Roasted Garlic, Olive and Tomato Pasta Salad – Full of summer flavors

I love soba noodle salads! My favorite variation has a creamy peanut lime dressing, and is super healthy with kale and tempeh. The recipe is here:

Nice list of recipes - the sunomono and the drunken noodle salad look especially yummy. One of my all-time favorite cold noodle salads is Elise's (Simply Recipes) Sesame and Cilantro Vermicelli. Very easy to throw together and excellent for potlucks.
These look very tasty. Even better if you can use some low GI noodles, such as veg-based noodles, or vermicelli. What about a noodle salad with fresh veggies and cashew butter dressing? (You make the cashew butter yourself just by whizzing up some cashews.)
101 cookbook's otsu recipe http://www.101cookbooks.com/archives/000110.html is my favorite cold soba dish. This is a very welcome thread during this heat wave!
Try it with almond butter instead of peanut butter. I think it taste better.

I use the same version using cold kelp noodles, no need to cook them.
