Every chain restaurant has one, and for good reason—spinach dip is a crowd pleaser that's delicious and feels virtuous just because it's green. (FYI if it's bubbling and cheese-crusted, it's not.) Here are three versions: One hot and gooey, one cold and healthy, and one adorably served up in mini bread bowls.
1. Spinach and Artichoke Dip, from the Kitchn. Nealey's version of a Southern staple, using fresh (not frozen!) spinach, artichokes, wine, cream, and sour cream. Delicious.
2. Spinach Avocado Dip, from Martha Stewart Living. The idea of mixing wilted spinach and greek yogurt with mashed avocado sounds so appealing. And healthy! We love the sugar snap peas for dipping, too.
3. Baked Spinach Dip Mini Bread Bowls, from Picky Palate. We've made these twice for baby showers, and they're a hit. You use store-bought biscuit dough to make little bread bowls that are super cute (FYI we used frozen spinach with perfectly good results).

Straw Mat from The ...

This has been my go-to spinach dip since I saw it in the NYTimes a few years ago. Even people who don't like spinach dip eat this one up. Best served with tortilla chips.

Thanks for the mini roundup.
My friend made a somewhat standard version of this dip the other day. While it was good, I wanted to try to make a version that was lower in fat and #2 seems to fit the bill.
The second spinach dip with greek yogurt sounds like Persian borani. If you add some yellow raisins and take out the avocado, the results will be even better!
I make a spicy spinach and cashew sauce that makes a wonderful dip. It's creamy, yet vegan. Very flavorful! Not at all hard to make.
Oh man, this just makes me miss the cold spinach dip served in a hollowed out loaf of bread with the cubes for dipping from Green Mill. Anyone else from the upper Midwest know what I'm talking about? SO GOOD.
I like spinach artichoke dip stuffed mushrooms.
