I'm making a corn and bean salad and cheese enchiladas for dinner tonight, plus some whole wheat bread for later in the weekend. Saturday we're going out to dinner, so no cooking planned. Sunday, we're having a bunch of cyclists over for a pre-ride breakfast, which will be a strata with the aforementioned bread, eggs, cheese, and homemade sausage, plus bacon, hash browns, and some bar cookies made with my freezer jam. Dinner Sunday will be vegetable samosas and Nigel Slater's chicken curry.
