While many folks lament the produce available this time of year, I find the cooking opportunities to be rich and inspiring. Thankfully, I love winter greens, so while the more delicate lettuces, vibrant peppers, squashes and tomatoes are gone until warmer months, winter greens provide endless opportunities for healthy, delicious cold-weather meals.
Winter greens include swiss chard, kale, collard greens, cress, spinach and turnip greens. They're different from more standard lettuces because they tend to be heartier and have their own distinct flavor profiles. This hearty nature makes them a great candidate for cooking and sauteing as well as enjoying in everyday salads. Here are a few recipes that we've been swooning over recently. I enjoyed Chard with Bacon and Apple for New Year's lunch. I followed the commenters' directions on cooking the stems longer than the wilted leaves. I added freshly grated nutmeg in at the end. The anti-chard guest was converted.
