We were really pleased to see that several of you (and maybe more?) plunged into bread-baking this weekend in response to our weekend Cure assignment. Bread baking is unbelievably easy, and if you start to fit it into your weekly routine you'll find it hard to go back to supermarket bread. We're curious to know, though, did anyone attempt homemade matzah for Passover? Or perhaps just matzah brei?

Week Four for all you Cure Takers is in full swing. You should be up to your ears in roasting and soup-making. Carnivores and those identifying as Meat-Curious were asked to roast a chicken then make stock from the carcass. The vegetarians and those identifying as Veg-Curious should be roasting veggies then puréeing them into a soup.

How is it going? Did you get a chance to cook yet? I noticed there aren't pictures in the Kitchn Cure Flickr pool - did you eat your chicken before you photographed it?!

Welcome again. It's Week Four and I have an inkling that you're ready for a challenge. In the survey we took of Cure-takers, the majority of people said they were "a good cook, but open to learning new things." Many people said they wanted some quick and easy, but impressive, techniques for cooking. Tricks to pull out of one's back pocket.

So this week we all cook the same thing. There are vegetarians among us, so we'll actually do two dishes: your choice. The idea is to not give recipes, but rather, give techniques. Although, recipes, we have. About 450 original ones in our recipe archive.

As we're busy here at The Kitchn spring cleaning with the Kitchn Cure, Jews all over the world are also busy preparing for Passover. This is the time to ritually clean your kitchens, and get rid of chametz - leavened bread and other foods that may not be eaten during the holiday. More

Cure-takers, how is Week Three going? You have started cooking, using what you have, and perhaps experimenting with using some seasonal ingredients, if, lucky you, there is anything local available in your area.

Did you sassy over-achievers who had already done much of the assignment already get to the special weekend edition assignment?

There, I spoke about the importance of one good knife and one good pan. Of course, anyone can cook with any level of equipment, and , but having these two items really helps. I asked you to buy, beg, or borrow these items. And make sure the knife is sharp.

Boy, y'all are a tough crowd! Complaining to me that you've jumped ahead in the Kitchn Cure assignments.

If you have no idea what I'm talking about, fine. If you are indeed one of the enterprising folks who thought this week's assignments were a yawn, well, how about first patting yourselves on the back for being so on top of things? You got ahead and did the natural thing and cooked with food you were cleaning out. If you, indeed, already have cooked up something with what remained of your kitchens, post-Week-Two, then just consider Week Three a little rest before you start really ramping things up.

And watch what you tell the teacher... you're apt to get heftier assignments then you bargained for. More
