Editor: My food processor has a special blade for grating cheese, called a "shredding disk." If your food processor didn't come with one of these blades, you may want to look into getting one.
Softer cheeses are also sometimes harder to shred and tend to smear. Make sure your cheese is very cold before shredding it.
