Q: We aren't big yogurt fans in my family, but I like to bake with it. Is it possible to portion it and freeze for future projects? I won't use the whole carton and it will just go bad.

Editor: Mollie, freezing yogurt seems to cause it to separate, but if you're just going to be baking with the yogurt (not eating it straight) then it does seem like a practical option. Here's a good thread to look at first, too:

In the summer I get cups of flavored yogurt and freeze them, then eat them with a grapefruit spoon later on. SO delicious! I haven't noticed any ill effects. I usually use Friendly Farms, the Aldi's brand.

couldn't you just use up the entire container of yogurt on a bunch of baked goods in one go (have a baking day!), and then freeze the baked goods? i would think cakes, breads, etc. would freeze much better than the yogurt, and then you've got baked goods ready to go in the freezer when you need them, and no wasted yogurt.
Absolutely! In fact, I always freeze cups of Siggi's (pictured above) as my sweet treat in the summer. Their orange ginger is to die for!!!
OF COURSE its possible to freeze yogurt. Ever hear of frogurt? Frozen yogurt? You know, the dessert you can buy in shops all around the world?

frozen yogurt, the dessert, has a lot of stabilizers in them to keep them nice and creamy as when they melt. Unadulterated yogurt will separate and maybe even get a little grain. But as Faith said, since it will be used in baking, that shouldn't be an issue.
if you have a concern about it separating while freezing, freeze it using an ice cream maker. i freeze kefir this way all the time (for eating, not baking).
Thanks all for the comments everyone! Yes, I'm aware of frozen yogurt, but it's s different process to get it like that.
I tried freezing yogurt to eat later. You have to stir it up and it definitely changed the texture.
One of my kids didn't mind the texture but the other does. So, it might be worth trying to see if it's acceptable to you for eating.
Oh, but now I see that you plan to use it for baking! I'm sure it would be fine since it was almost fine for eating straight! But you will have to stir it up. :)
