In the midst of an August heat wave, it's easy to forget that September is right around the corner with its back-to-work, busy schedule. Why not spend a couple leisurely late summer weekends making and freezing some nourishing, healthy meals to sustain you through early autumn? Once the vacation is over, you'll be glad you did.
10 Meals to Make and Freeze Now
WITH MEAT
• Ham Bone, Greens and Bean Soup: A nutritious, stick-to-your ribs soup full of vegetables and porky goodness.
• Rich and Meaty Lamb Ragù: A gorgeous sauce to top freshly-made pasta or polenta.
• Easy Turkey Chili with Kale: A hearty one-pot meal that tastes even better reheated.
• Chicken Pot Pie: Individual pot pies bring me back to my childhood, when frozen Marie Callender pot pies were one of my favorite treats.
WITH OR WITHOUT MEAT
• Calzones: Not only the perfect vehicles for using up leftover odds and ends in the fridge, calzones also freeze well for future dinners.
• Lasagna: Assembled and frozen in individual containers, lasagna makes an excellent meal for one or two people.
• Burritos: Fill burritos with all your favorite ingredients — I'm partial to black beans and roasted vegetables — and freeze for later.
VEGETARIAN OR VEGAN
• Chana Masala: This vegetarian Indian chickpea stew is light yet satisfying.
• Curried Vegetable and Chickpea Stew: A double-whammy of convenience, this recipe can be made in the slow cooker and frozen in portions for later.
• Muhjadarrah: This Middle Eastern combination of lentils and rice is both tasty and economical.

When I broke my arm last January, I was SO glad I'd frozen a bunch of meals in the fall. I had butternut squash soup, lamb stew, chicken cacciatore, sausage stuffed bell peppers, and lots of chicken stock.
Whenever I make homemade ravioli or potstickers I make three times as many and freeze them. They're great for quick meals.
Last year I cursed myself for not stocking the freezer pre-back-to-school. With curriculum nights and homework again, it's NOT the time to be struggling to get dinner on the table. I will have quite enough to do without menu planning! I'll be making plenty of burritos and black bean burgers (can double as lunches), and I think with all this great corn at the market I'll make a big batch of corn pancakes. Savory for dinner, but a real kid-pleaser. I will freeze some ricotta-veggie tortas, too, for fast brunches. And smoothies in muffin tins!
Dying to make those calzones for like ever.
Just last night I froze burritos. Trying to always have something for those nights where there is no time for anything but sit down and eat.
Looking through this list I realized I've made a lot of these recipes in the past. Thanks for all the good ones!!
Who's on vacation??? I'm busy NOW!!!
:)
I just made the curried chickpea stew--we love it! I won't be waiting until September to finish what's in the freezer!
Smitten Kitchen's Mushroom Farro Soup freezes beautifully. I made a 3x batch, poured individual serving sizes in ziploc baggies, squeezed the air out, and laid them flat in the freezer. The night before I'm bringing it for lunch, I toss a bag in the fridge, and in the morning, pour the thawed soup in a tupperware bowl and go. Takes up way less space in my freezer, and there's less air in the bag to cause freezer burn.

I love your idea to repurpose leftovers into burritos and calzones/hot pockets! Those will be way more appetizing down the line and you can amass a good variety to choose from. I love to make and freeze Chili Con Carne with Beans:

Gumbo and Boeuf Bourguignon, are great too, as well as chinese wontons that can go straight from the freezer to boiling water, then my belly.
Meatballs and pasties are my current go-to freezer faves, but I need to make more! I just made another mega batch of chicken stock as well.
