Not that Mexico is the only country is Latin America to have tamales, tacos and stuffed peppers as dishes, but all these dishes seem to be inspired by Mexican dishes. Perhaps you should change the post title to Mexico instead of Latin America.

Here is a delicious and easy non-Mexican Latin dinner: Venezuelan Stuffed Arepas. Arepas are delicious corn cakes popular in Colombia and Venezuela. Here I stuff them zucchini salsa verde and black beans.

oohhh I LOVE Brazilian and Argentinian food, and have never seen a good intro/cookbook covering either...anyone having any tips?
This summer was the summer of Pollo de Tinga for me. With fresh tomatoes and chipotle chilies I couldn't get enough. An easy and light dinner or lunch.

We're thinking of trying a sort of brazilian mixed grill thing soon, spicy meats and garnishes sounds like a party to me! In the meantime, some of our favorite more mexican kinds of things are chile-lime-herb steak tacos, tacos with scrambled egg, feta, and avocado, and tacos with mushroom, potato, and chorizo!

Definitely agree w/ others that this is all Mexican-inspired food and title should be appropriately amended. And those so-called verde enchiladas are not so. They don't appear to have anything close to a tomatillo in it.
Typical Brazilian barbecues consist of picanha, which is usually only seasoned with coarse salt. That cut of beef is so tender and flavorful that it really doesn't need much added. Mmm, my mouth waters!
