Butterscotch sauce will always and forever reign king of the ice cream toppings in my world. And rich butterscotch-flavored blondies? I'm all over that. Don't even get me started on pudding. Do you love butterscotch, too?
At its heart, butterscotch is a simple combination of brown sugar and butter. The molasses in the brown sugar gives butterscotch a deeper and nuttier flavor than it's caramel cousin. The butter, perhaps obviously, makes it intensely buttery and rich. It's a match made in heaven.
Butterscotch can be a flavoring component in cookies and cakes, or it can be simmered with cream into a silky ice-cream-worthy sauce. Personally, I'll take it any way I can get it.

I love, love butterscotch. When I want a treat, I'll have an espresso with a shot of butterscotch. Delicious!
By the way, does anyone read Lucky Peach? In their 3rd issue, there was a recipe for a miso butterscotch. It is amazing!
I adore butterscotch, in all its forms. Last summer, we hosted an ice cream social at church and I made all the toppings. I used the "Ridiculously Easy Butterscotch Sauce" recipe from Smitten Kitchen, and it was all of those things. Absolutely amazing, and I ate every bit of the leftovers - mostly from a spoon, holding the bowl in front of the open refrigerator door.
theres a local italian restaurant that has a butterscotch "buddino" thats absolutely amazing. you wouldnt think butterscotch pudding could be this good; but it is. i'd love to find a recipe that replicates it. it's set good, not eggy, very deeply flavored.
